Yikes!

Today my main man Matt turns 27! We are getting OLD!!!! When did that happen??At least he will always make me feel young at heart!

For the last two weeks we have been really strict back on our diet and generally eating healthy. It's amazing the energy difference when you're eatting the right fuel. I feel incredible, my 5 am alarm rings and I leap out of bed! Woo hoo let's get this training party STARTED!!

But birthdays are a diet exception. It's your one day a year to go wild and there's nothing more than eatting your favourite foods with your favourite people. Tonight I'm making my healthier chicken parmesan with spaghetti squash (instead of pasta) and Matt's all-time favourite – homemade snickers bars. These things are INSANE! So so so delicious but certainly a once in a while treat. They are decadant beyond belief!

Chicken Ingredients:

8 chicken breasts – cut in half to make 16

2 cups italian bread crumbs

1 cup milk

2 eggs

1/4 cup olive oil

Directions:

Cut chicken breasts in half lengthwise so that they are very thin.

Then set up two bowls – one with the milk and egg mixed together, the other with the bread crumbs. Dip the chicken pieces in the bowl with milk and eggs then dip the chicken in the bread crumb mixture.

Place the chicken in a frying pan – on high – with the olive oil. Heat chicken 2-3 minutes per side.

Serve with slow roasted tomatoes, tomato sauce and spaghetti squash.

    Awesome Christie! Happy birthday Matt! I make chicken/veal parm even healthier by using spelt bread crumbs instead of white bread crumbs
